Buffalo Chicken Meatballs


  •  1lb. Ground Chicken
  • 1 Cup Buffalo Sauce
  • 1 Cup of butter
  • 1tbs. breadcrumbs
  •  S&P
Preheat oven to 400.
Place ground Chicken in a bowl, add breadcrumbs and salt and pepper; mix.
In a mini muffin tin, place about a heaping tablespoon (I use a smaller size cookie scoop, it works perfectly and makes for even size meatballs) of the chicken mixture into each muffin tin; you can roll around in your hand to make them more round.

Bake for about 20-25mins. or until fully cooked through.

In a skillet, heat the butter and hot sauce together. When meatballs are finished cooking, place them in the hot sauce mixture to coat.
